Fukuoka Prefecture is famous for its teas from Yame. It and Uji in Kyoto are the largest gyokuro-producing areas in Japan, but Fukuoka is best known as a major sencha-producing area.
This is a superior fukamushi Yame sencha from Tadami in Yame Town. It is finely rolled according to tradition into lovely, silky, shiny green needles. In fact, with respect to today's practices, this should be refered to as a chûmushi sencha, a medium steamed tea.
The dry leaves have an enticing sweet fragrance, and the infusion releases scents recalling hazelnut praline and roasted chestnuts, owing to the hi-ire typical of Yame (though in this case it has not been taken too far).

This sencha has a powerful flavour that is very mellow yet stimulating and balanced. After grassy notes, sweetness and clearer umami invade the palate. It is very long in the mouth.
The cultivar is the classical Yabukita. Many different steeping methods are possible, but preparing a relatively strong version of this Yame cha using rather cool water produces wonderful flavours that change over the three or four infusions that are possible if you increase the temperature of the water slightly each time.
Steeping method:
Quantity of leaves: 4-5 g / 1.2-1.5 tsp
Quantity of water: 70 ml / 1/4 cup
Water temperature: 70°C / 155°F
Steeping time: 50-60 seconds

- Chuť je silná, vyvážená a stimulující, vydrží dlouze v ústech
- Nálev je trávovitý, sladký s umami ,lze tam cítit lískové oříšky, pralinky a mírné pražení
- Když se dobře připraví, vydá až 4 nálevy

Čaj přišel vakuově balený, po jeho otevření se opět rozjela svěží vůně listu. Čaj připomíná čaj "Fukamushi Sencha YAME" díky tomu má mírně pečenou vůni i chuť. Čaj opět jen doporučuji.
